Chapter 19:  Apple Crisp Ale

Brooklyn Brew Shop’s Apple Crisp Ale was interesting – a dark brown ale with a nice hint of apple due to the steeped apples at the end of the boil.   There was a hint of “heat” in this one – although it was only 6.2% ABV.  I would brew this recipe again.

OG: 1.052

FG: 1.005

ABV: 6.2%

Batch size: 2 gallons



Chapter 20: Honey Basil Ale

This unusual beer was another experiment, but I think it worked out pretty well.   The final flavor was a nice fresh basil – not medicinal at all, which was my fear.   It’s almost too sweet, actually, so I’ll probably alter the honey malt composition when I brew this again next summer.

OG: 1.055

FG: 1.012

ABV: 5.7%

Batch Size: 1.25 gallons



Chapter 21: Smoked Porter

I just started drinking this one, and I’m pretty psyched about it.  There is an awesome, but not overpowering smoke flavor.  I’m not sure if this flavor will fade or intensify over the next few weeks in the bottle.   The only weakness in this beer is that the mouthfeel is a bit “thin.”

Chapter 22: Peanut Butter Porter

This experiment with PB2 powdered peanut butter was a fun exercise in homebrewing.   My final gravity was higher than expected, which led me to fears about exploding bottles.  Thus far, those fears have proved unfounded.   When I bottled this beer, it was sickeningly sweet, but after 2 weeks in the bottle, the overpowering peanut butter had morphed into a subtle smokey/bacon tone.   A guest noted that he probably wouldn’t have even picked out peanut butter if I hadn’t told him.

ABV: 5.6%
