The Beer Diaries Chapter 9: Smoked Cherry

Smoked Cherry was yet another of the BrooklynBrewShop creations which I brewed.  They noted that this one really starts to come together after 6 months in the bottle, so after popping a few in the weeks after bottling, I hid the rest of them on my basement shelf to age with my fine wines…

Today, almost 3 months after bottling, I opened another bottle of this Smoked Cherry, and the taste had definitely changed.  Whereas at first the cherry flavor (remember, I added frozen cherries at the end of the boil and left them in for 3 weeks of fermentation) was very subtle and the smoke less so, now it was reversed:  I was getting more cherry and less smoke.   I’ll start drinking these now, and if I have any left in 3 more months I’ll be sure to update the comments of this post.
