Late Garden Harvest: Tomatillos, Peppers, Eggplant, Carrots

We pulled up the remnants of our garden yesterday and harvested a tremendous amount of late-season bounty.



As you can see, we’ve got tomatillos coming out the whazoo.   We’ve also got our hands full of jalapeno peppers and Hungarian Hot Wax peppers.   Green peppers were strong, and you can probably see an entire bowl full of eggplants on the right of the picture.    I’ve been using the tomatillos and the peppers to make a chicken tomatillo chili, but now I’ve started freezing them: husk, wash, dry, freeze.  It seems to be working.

The only thing still standing in our garden  is our Brussels Sprouts…
