Homebrew Batch #28 – Cream of Three Crops Ale

Astute readers will notice that I skipped over Batch #27… That’s because I re-brewed my smoked porter with some slight variations for batch #27 – brew date: 3/23/13, OG: 1.05.

This “Cream of 3 Crops Ale” recipe came from the forums at Homebrewtalk.com.    I scaled it down to 2.5 gallons, and uploaded my numbers to Hopville.  The name of the recipe comes from the 3 different crops in the mash,

Mash: 90 minutes at 152 degrees:

3.5 lbs of American 2 row pale malt

1.5 lbs of flaked corn

0.5 lbs of flaked rice

Sparge with 3 gallons of 170 degree water.  Bring to a boil.  After 30 minutes add:

0.25 oz of Crystal hops and

0.25 oz of Willamette hops

boil for 60 minutes more, then remove from heat, chill to 70 degrees, and pitch:

Safale US-05 yeast.

The recipe’s author, “Biermuncher,” advocates the 90 minute mash to get a highly fermentable wort that results in a very crisp beer.  My mash temp was actually probably a bit low, so we’ll see what happens.

My original gravity came to: 1.050

As usual, I’ll give this 3 weeks to ferment in the basement
