Homebrew Batch # 23: Winter Ale

This isn’t a traditional spiced winter ale, it’s just something I threw together from scratch – what’s the worst that could happen?  As usual, the info is on Hopville:

Batch size: 2.5 gallons

Mash: 60 minutes at 154:

3lbs Maris Otter

1.5 lbs. Victory Malt

0.75 Smoked Malt

0.5 lbs Flaked Oats

Sparge with 2.5 gallons of 170 degree water.

Bring to a boil, then add:

0.5 oz Fuggles

after 30 minutes, add 0.25 oz Saaz

after another 25 minutes (55 minutes total), add 0.25 oz Hallertau, and 1/2 teaspoon of coriander seed.

after another 5 minutes (60 minutes total), remove from heat, chill to 60 degrees, pitch Nottingham Ale Yeast.

My OG came in right on target at 1.050.

I will give this three weeks in the basement to ferment before bottling.
